Sweet Potato Pear Crostini

Ingredients:
1 sweet potato
1 pear
1 tbsp avocado oil
3 tbsp goat cheese
1 tbsp crushed almonds

Tropical Chicken Salad

Ingredients:
4 oz shredded chicken breast
1/2 zucchini cut up into bite sized pieces
2 tsp coconut oil
3/4 cups pineapple cut into small cubes
1 tbsp lemon juice
1/4 tsp dry basil
himalayan salt & pepper to taste

Directions: In a medium sized mixing bowl add your chicken, zucchini, and pineapple. Top with coconut oil, lemon juice and seasonings. Then toss!
