If you had told me 10 years ago during my rock bottom days that I'd be doing this (and many other things I GET to do now) at 45 my limiting beliefs would have thought no possible way . At the time, those limiting beliefs were winning.
You see "limiting beliefs" kill possibility. They put out flames, stop potential and give us false comfort. They suck.

Do you strive to be "skinny?" At one time I did. It felt discouraging, impossible, and defeating. It was a place of deprivation, isolation, criticism and depression. I failed at that. You see "skinny" is subjective and for many, near impossible. It can be totally defeating. And for what? Health? I don't think so.

Healthy Gluten Free Mac and Cheese, YES PLEASE!

1 head of Cauliflower
1 small butternut squash cut into cubes
1/4 cup water
1 Carrot peeled and diced
1/2 small Sweet Onion diced
2 tbsp ghee
1 tsp minced garlic
1 tsp dijon mustard
1/2 can Coconut Milk
1 Egg Yolk
2 scallions thinly sliced to garnish
